A Conversation with Sun at The District
I met Sun who has been working at The District for 5 years. I asked her what was the best thing about working at Marriott 57, “the customers!” she responded without hesitation, “I learn so much from them,” she continued. “When I first started work, my English was…” she pinches her thumb and index finger together and wrinkles her nose, “…little.
“Now I have picked up not just English but Japanese and a little Chinese too.” Sun’s favourite dish on the menu is the Hokkaido Scallops, served with black garlic puree and wasabi mayo, as she dives into telling me in minute detail about the marinade process and cooking methods. As for the steak, Sun’s choice is always Japanese Saga Wagyu Ribeye, “so tender and little fat” she says. “But if you order the Miyazaki Wagyu Striploin, that comes with Hokkaido Scallops anyway.
“We recommend to all our customers to have their meat cooked medium-rare to really appreciate the taste and texture of the fine cuts. But of course we’ll always cook it the way the customer desires”. Sun smiles and wais politely. She spots me admiring the wine on display in a large glass-walled room inside the restaurant, “we’re also taught about wine, for example, a red Bordeaux wine is dry and that goes well with fattier cuts of prime beef, whereas a Pinot Noir is much softer and is a better match to tender cuts”.
